A food that is a major economic driver and occupies an essential place in France’s food heritage.
In our profession, we often refer to milk as if it was a unique and uniform product.

And yet…

There are some 20 breeds of cattle, present in 88 regions across France, and on more than 46 000 farms, each with their unique specifications according to the surrounding environment and land, thereby shaping the characteristics of over 1500 everyday dairy products. This includes some 1200 different types of cheese and 51 PDO dairy products, which are made available daily through the efforts of 300 000 workers representing 65 different professions in the sector.

So should we be talking about ‘milks’?
